A freezer filled with harvested venison is a blessing that should never be wasted! Years ago I made a batch of breakfast sausage with some of the ground deer to "experiment" and now, it's a freezer staple! I'm telling you this, because it's an essential part of the griddle muffin recipe, AND every hunting family (or family with access to fresh venison) should give my favorite breakfast sausage recipe a try! I'll share the sausage recipe in just a moment, but first, these homemade griddles need a moment to shine!
I spent the better half of this last summer and the start of fall trying to find a solution to egg bites and breakfast muffins that I could not FOR THE LIFE OF ME keep from sticking to well sprayed pans and paper liners. I was loving my high protein breakfast options, but the cleanup was so frustrating and I preferred to avoid it at all costs. I kept being pointed in the direction of silicone, but I hesitated from my previous experience with flimsy trays that spilled and slopped and caused an equal amount of heartache. I finally did some Amazon "research" and found a set of silicone pans that are internally lined with steel, so they're structured enough to transfer from counter to oven without any mess! My egg bites and breakfast muffins slide out of them like a DREAM, and I honestly chuckle at how such a simple solution can often times bring us so much joy!
Now, for the venison. You can always make the griddle muffin recipe using a standard breakfast sausage if a venison blend is unavailable, BUT for those ladies like myself, who are always looking for ways to resourcefuly put that deer to good use, this breakfast sausage is a winner! You'll see in the recipe that I like to blend mine as a 70% venison + 30% pork mixture, and I usually grab a good ole' boston butt for that job. If you've never ground your own meat before, don't be intimidated! You need a few tools to get it done correctly, but once you've gotten your hands in the mix (pun intended) you may find that it's fairly straightforward, and entirely enjoyable!
